Here are some fun facts about Eggplant!

From Wikipedia,

“The eggplantaubergine, or brinjal (Solanum melongena), is a plant of the family Solanaceae (also known as the nightshades) and genus Solanum. It bears a fruit of the same name, commonly used as a vegetable in cooking. As a nightshade, it is closely related to the tomato and potato and is native to BangladeshPakistanSri Lanka and India.”

- its classified as a berry.

- a vast majority of its production comes from China, over 18 million tons!

- its a source of folic acid and potassium.

- in cooking, used in French Rattatouille, Italian, Middle Eastern, Arab Moussaka and Indian cuisines.
